
Where would you take your Mum on her birthday for a special local lunch?
Without a doubt to The Palms of Boracay. Its a Filipino inspired hotel with a menu that takes you on a tour of regional dishes in the country but with an international standard and sensitivity that makes it the perfect choice for strangers to Filipino cuisine. The Clubhouse is a Mindanao inspired structure with open sides that let in the breezes and has comfy sofas in the bar where they serve wonderful frozen mojitos and mango daiquiris. Our favourite dish is the Chicken Binakol served in the coconut shell which is a hearty soup made with the coconut meat and lemongrass, with its pastry hat it is a dish that always surprises guests I take there.
What is your favourite view of your city?
I have two - the sunset on white beach is breathtaking, the uninterrupted ocean view of the setting sun with the sunset sailing paraws silhouetted against the sun, its truly nature at its best. My second is the view from Mount Luho which shows the whole island below and the colourful kiktes being masterfully directed across the Bulabog Bay below. Spectacular.
Where would you go/or have you been on a first date?
I would take a trip to the secluded Puka beach. A short walk from the main entrance to this beach almost guarantees privacy. it is a long beach that is rarely visited so the perfect spot for a romantic picnic and swim.
What is your favourite pastime in your city?
Life here centers around the beach, spare time is spent strolling the shores and marvelling in the islands beauty, chatting to neighbours and watching the life of the island. We play frisbee and volleyball, kitesurf and wakeboard. We also of course have our famous sunset cocktail hour which locals love to enjoy as well.
What is your favourite local snack and where do you get it from?
Merienda-Filipinos love to eat and luckily so do I! Nothing is better than the street stalls that start to operate at around 3pm selling Merienda. While some of the offerings can be a little unusual such as Balut or pigs ear, most are just delicious. My personal favourites are the banana que or Kamote que which are covered in a caramelised sugar from the frying in the big wok at the stall. There are also wonderful sweet rice cakes like suman, bibingka, or puto. Best of all the prices are so cheap you can try lots of things.
